The frying appliances come with a high specific power ratio to assure a top-quality fried product as they reduce
the amount of oil absorbed. The specific power ratio furnished 1000 W/litre for gas, and 900 W/litre for electric models - are typical of large professional units.
The sensitivity of the thermostat, whose bulb is positioned in the centre of the bowl, assures unbeatable
temperature control and a prompt response to drops in temperature. Electric heating elements can be rotated to make cleaning easier. The chip scuttle can contain a GN 1/1
container 150mm high which is kept at the right temperature with the aid of a combination of heating elements: a lower element and a ceramic infrared
heating unit above, which can be controlled separately. The false bottom makes it easier to get the contents out and also to drain the oil in excess.
